Mascarpone mashed potatoes

6 russet potatoes, peeled and quartered

1/4 cup (60 mL) warm milk

2/3 cup (150 mL) Canadian Mascarpone

Salt and freshly ground pepper


In a large saucepan, cook potatoes in boiling salted water for 20 minutes or until tender; drain.

Mash potatoes; add milk and Mascarpone.

Season with salt and pepper and serve immediately.
